SAUVIGNON BLANC : FIVE BARRELS: 2023
Left to hang on the vine a bit longer than our classic Sauvignon Blanc, this parcel came into the winery riper, bolder and softer in acidy. It was hand picked and pressed straight into 5 barrels where the wild yeasts from our vineyard, our home, fermented it dry. Malolactic fermentation was introduced to add further texture and soften with hints of creaminess. 12 months of lees contact and patience has refined an elegant and enticing wine.
